Kickin’ booty

This morning I had fun, yes fun!

I did the KenpoX workout from my P90X DVD set. This is probably my favorite workout in the whole set. It’s so fast paced that you don’t look at the clock and  you really do have fun.

You also feel like you’re kickin’ someone’s booty with all the punching and kicking you’re doing. It’s awesome!!

If my best friend Abby is reading she would be surprised that I would be so good at KenpoX. In college we went to a kickboxing class together and I had to walk out about 3 minutes into it.

When everyone was going one way I was going the other. You could see me in the mirror totally uncoordinated, I was mortified and immediately decided I’m not cut out for this.

Abby to this day has  a laugh over this memory! It is pretty funny.

But for some reason I find KenpoX so much easier to follow. It starts out pretty easy and the sequences don’t become overly complicated. They don’t  incorporate more than 3 different moves at a time which makes it easy follow.

Seeing how I don’t have a gym membership buying P90X was such a great investment for Pat and I. Neither of us have the personality to do something 6 days a week for 90 days so we don’t follow the plan. We just incorporate some of the workouts into our weekly routines.

Honestly, one of these workouts is just like taking a class at the gym, you just have to have the diligence (which I lack a good amount of time)  to put it in your DVD player at home and follow through with it!

Breakfast:

 Back to the regular rolled oats now, splash of vanilla almond milk, cinnamon and chia seeds

And even more carbs:

Whole wheat raisin bread with peanut butter and a drizzle of honey on top

I was very excited for lunch today, since dinner last night was so awesome I knew just what I was going to have for lunch today:

Calzone!

I heated it up in the microwave which was a bad move. It still tasted good but if would have taken the time to warm it up in the oven (if only I had that kind of patience) it would have been crisper!

On my Doorstep

 

I found this:

Remember how I was getting excited this morning seeing all of the gifts on my registry that have been fulfilled?

Well one of them showed up on my doorstep today!

The anticipation was killing me…

What could it be?

My flatware, yippee!

 

Lunch was a treat today, my mom took Pat and I to Nick’s. Pretty much my favorite place in San Clemente that Pat never takes me… hint, hint, hint…

I had the Tuna Salad Sandwich which was ginormo:

The roasted veggies on the side were so yummy (sorry for the dark picture)

There were things in there that I would never think to roast like baby bok choy and pearl onions. I’m definitely going to keep those in mind next time I want to roast veggies.

The bread on the sandwich was so thick, there was no way I could get my whole mouth around it so I took the top slice off and ate it that way. I also brought the second half home.

Afternoon snack:

100 calorie mini-bag of popcorn, I love popcorn!

I get it from my daddy, his go to snack is popcorn. Like father like daughter 🙂

 

Dinner tonight was fun, I was feeling experimental so instead of our usual homemade pizza I decided to make calzones instead. I was a little nervous but they turned out so great!

To start:

Cut the pizza dough into four equal pieces. I just buy the pre-made kind, one day I will master the art of making my pizza dough, one day!

Spread your choice of bbq sauce on each piece:

Then add your fillings, I used the chicken apple sausage from Trader Joe’s and mixed bell peppers:

From here I added some mozzarella and parmesan cheese, here’s  where I got nervous, the fold!

This part was a little tricky, you have to fold them up without having everything inside fall out:

I sealed the edges shut with a fork and slit a hole on top so the steam could escape. I sprayed them with cooking spray, sprinkled a little more parmesan on top and popped them in the oven.

Ta-daaa:

They looked so pretty, I was just hoping they tasted as good as they looked

They did! Pat and I were in love…

The crust was light and crispy but it was soft enough to easily devour into!

The asparagus we had alongside was good too 🙂

This experiment was a success and I will definitely be making more calzones in the future

These week has been full of sweets for me and tonight was no different:

Kashi cookie, for me this was being good.

 

I’ve got the worst sweet tooth in the world, what can I say!

Is it Bad?

 

That I just checked my wedding registry and got really excited about the gifts that have already been bought for me??

Oh!!

I mean for us!

Those of you that know us best, are quite aware that Pat is lost in the kitchen so basically all those items on our registry are really for me!!

So thanks a bunch, I can’t wait to use everything 🙂

Ever since Pat and I moved in together I had to tailor all of my cooking around one pot, one pan that sucked and one cookie sheet. For a girl who loves to be in the kitchen this is hard work people.

Life is so hard….

 

Well, I did get to do a run today but I took it lightly

3.20 miles in 30:59 minutes

Now my knees are getting a little achy as I type this, I’m debating if I should go grab some frozen peas out of the freezer and put them on my knees….hmmmm

I wanted something a little more special for breakfast this morning so I decided to make some pancakes:

I have seen tons of recipes for protein pancakes all over the blog world and here is my version, they’re not perfect but I enjoyed them quite a bit!

1/3 cup oat flour (you can pulverize rolled oats in the blender to get oat flour)

1/4 cup non-fat cottage cheese

1/4 vanilla almond milk

1 egg, 1 egg white

1 packet of stevia

* I just mixed the batter by hand, I didn’t want to whip out the blender and wake Pat up. The batter would be smoother if you blended it. Just a thought!

I spread Justin’s Honey Peanut Butter on top and drizzled some honey over them as well.

They are really dense and filling, which I love!

 

I haven’t been showing you guys my usual cup of joe but that’s because it always looks the same:

 

I’m kinda starting to feel like I want another cup it’s a little cold out today…

Sweet Tooth

 

This morning I woke up and forced myself to do something other than run again, I did an upper,middle,lower workout from the P90 Master Series. It’s a quick 30 minute workout that gets your whole body, I actually forgot how much I loved that workout. I’m super sore today from my workout yesterday as well.

I tell ya, that Tony Horton, he really knows how to make you sore!!

Breakfast:

 

Steel cut oats, splash of vanilla almond milk, spoonful of chia seeds and a spoonful of cocoa powder

with:

 

2 eggs! Shocking

 

Don’t you hate when people at work bring candy to the office?

I do! But then I don’t…

 

A mini Snickers and a mini Reese’s. Since they’re mini it doesn’t really count huh?

 

Lunch was a leftover California Delight wrap from yesterday.

Snack:

 

Pink Lady Apple and a spoonful of Justin’s Honey Peanut Butter

 

For dinner we ventured down to Irvine Spectrum for dinner, we had another gift card!!

This time to California Pizza Kitchen:

 

Small bites Asparagus and Arugula salad, delicious!!

I also had a bowl of the Tuscan White Bean Soup on the side:

 

I don’t know what it is with me lately but any kind of vegetable soup just makes me want to gag. It’s weird, so I only had a few bites…

 

I have had an extra sweet tooth today so I made this when I got home:

 

One of the Trader Joe’s Reduced Guilt brownies I made a few nights ago. I added a splash of vanilla almond milk on top and put it in the microwave for 30 seconds.

It was so ooey and gooey!

It’s a good trick I will keep in my back pocket for sure.

 

Well, I’m going to go on a run tomorrow morning. I think I’ve given my knees a good break.

We’ll see how it goes!

Ticks on Flea

Pat and I went to our favorite sandwich shop for lunch yesterday, Board and Brew

I had the California Delight:

 

Whole wheat wrap with turkey, cream cheese, sprouts and sunflower seeds. Very yummy, I only had half and ate the other half for lunch today.

After lunch we decided to go on a hike which didn’t quite go as planned…

It was so beautiful outside:

 

We took Flea along with us, poor Bell had to stay behind because she wouldn’t have made it half a mile until she poops out

 

Flea is so ready to go! Pat needed to stretch first 😉

The hike didn’t go quite as we expected it to…

 

The weeds were really tall and the trail was a bit overgrown…

We did a little trailblazing and immediately Flea was invested with ticks

ICKKK:

Flea was very cooperative as Pat began to flick the ticks off

 

I just stand and hold sunglasses on top of my head, I don’t dare go near those nasty little guys

 

So because of all the ticks we ended up heading home earlier than planned!

 

For dinner we went to T.G.I.F, this isn’t a place we would choose to go eat at but we had a gift card. My baby loves a free meal!

Debbie Downer

 

Today I feel like such a Debbie Downer!

By the way, sorry if your name is Debbie.

I try to be a positive and optimistic person but sometimes that isn’t always possible.

So today, I’m Debbie Downer.

I’m not going to blog about what I ate yesterday because honestly I don’t feel like it. Don’t worry, it wasn’t far from my usual day of eating, I didn’t go crazy and find myself knee-deep in a bag of cookies or anything. I just really don’t feel like posting about yesterday, so I’m going to post about today!

 

So here is one of the reason’s I’m feeling down. Since I put in so many miles last week, (more than I have ever done)I think I over did it a bit. My knees have been super achy, I wanted to run today but I knew I shouldn’t. Pat says that it’s my body’s way of telling me to rest.

Yadda Yadda Yadda!!!

I know it’s partly true but seriously?? I just want to tell my knees to stop complaining and suck it up already!!

Today I had to be creative and do something else, I did half of  P90 Master Series cardio interval workout. When I bought P90X it came with two bonus workouts and this is one of them. It was only about 30 minutes long, I was working hard but I got bored so I turned it off.

I guess getting hungry had something to do with it as well:

Old Man

 

I drove down to Newport today to drop our invitations off with the calligrapher.

On my drive down I ate my lunch:

 

A banana, a thinkThin bite and a hunk of raisin bread I bought yesterday. It was a random lunch, I agree.

 

From the calligrapher I had to pick up our champagne flutes and cake serving set from the engraving place. Luckily, it was located in the mall 🙂

I was in the mood for some retail therapy but was really let down today…

Don’t you hate when you go shopping with every intent to buy but you can’t find anything you want to buy??

Well, that was today!

I went into my favorite stores and nothing was jumping out at me I was so disappointed 😦

The last couple of days my joints have been starting to ache a little bit, mostly me knees. I decided to head to Trader Joe’s and pick up a joint supplement.

Which ended up being quite an interesting experience….

As I was looking at all of the supplements on the shelf trying to find a “joint supplement” this old man comes and stands right next to me. I mean directly next to me, he was touching me.

My first thought is

“Ok, this guy does not understand the concept of personal space!”

then I found what I was looking for:

 

Just as I grabbed it, the old man touches my arm…

Old man: “You know what’s really good for your joints?”

Me: “Oh, nooo. What?”

Old man: “Apple cider vinegar and raw honey. I mix equal parts and then add it to water. I drink it like that a couple of times a day.”

Me: “Ohhh really?”

Old man: “Oh yeah and you know what else it’s great for? Your complexion and your hair. Your hair will become so shiny and healthy,  it will stop falling out in the shower so much. (he’s saying this as he’s spitting on me, still in my personal space!)

Me:” Ohhh, wow…” (I didn’t really know what to say)

Old man: “Oh! Do you suffer from menstrual cramps?”

Me: “Ummm….. no not really…” (getting really uncomfortable now)

Old man: “Well this will wipe them out completely!”

Me: “Good to know!”

From here I put the Joint Support back on the shelf and say:

“Well, I’m going to go and get some apple cider vinegar and honey then!”

I mean the old guy had good intentions but it was quite the strange encounter. Bless his heart!

So I walked around TJ’s a bit trying to kill time until the old man left and I could go grab my Joint Support supplement. It wasn’t a bad place to kill time at, I love TJ’s.

These made for a yummy dinner tonight:

 

Chicken apple sausage sandwich’s with carmelized onions on top and rutabaga fries on the side. I got the idea to make rutabaga fries from Julie at Peanut Butter Fingers.

So good, I’ve never even had a rutabaga, didn’t even know what it was! I will definitely be making these again.

I made them for dessert tonight:

 

Chewy, fudgey and yummy! Oh, Pat liked them too…

It was the description that really got me, plus the nutrition facts aren’t too bad either so I ate three on my way home:

 

Even though I didn’t get to buy anything at the mall I can always find something to buy and Trader Joe’s!

TJ’s gave me the retail therapy I needed 🙂

Experimenting is Fun

 

I slept in a little bit today which felt good!

When I got up I enjoyed my coffee while I cooked the steel-cut oats I bought yesterday. I wanted them to be ready by the time I got back from my run.

I ran 6 miles in 55:04 minutes. I don’t know if it was the really cold weather today or the fact that the last .90 miles was flat. When I started my run I decided I felt like a 4 mile run but once I got going I felt really good so I kept with it. Glad I did, I’ve never ran that far in my life.

 

Once I was back I was so excited to try the steel-cut oats:

 

I added a splash of vanilla almond milk, spoonful of chia seeds, cocoa powder and a spoonful of my new Justin’s PB

They didn’t taste any different from rolled oats to me but the texture is different. They have a hearty-er texture which makes them last longer, I’m a fan of that!!!

They did take around 30 minutes to cook though, I’m glad I made a big batch

Since I can’t let myself have breakfast without protein these were involved:

 

2 eggs with a sprinkle of cheese

 

I have some more wedding errands to run today, they never end!!

I’m also really in need of some retail therapy

Nordstrom is calling my name. It’s been awhile I think I deserve it, that’s my justification.

Whole Foods

 

Yesterday I had to venture down to Irvine to run a wedding errand so I thought I would check out the massive Whole Foods that is down there. I have never been to Whole Foods, I’ve been to other fabulous stores like it but never Whole Foods.

Boy, it was a treat and at the same time torture! Everything was so stinkin’ expensive, I basically walked around and lusted over everything that I couldn’t buy. I did walk out with a couple of things that I was excited about:

 

 

 

Garbanzo Bean Flour, I’ve seen some recipes lately using this flour so I want to give them a whirl.

 

Seeing how I’m obsessed with the thinkThin bars I just had to try these!

 

Steel cut oats, I’ve never tried them so I thought this weekend would be the perfect time to experiment.

 

Whole Wheat Raisin loaf, this was just an impulse purchase.

 

I had to try some once I got back in the car

I was expecting it to be sweeter but it actually wasn’t very sweet at all, still yummy though. Oh, and this is what I had one my drive down to Irvine

 

Yep you guessed it, another thinkThin bar

White Chocolate Chip is also a really good flavor. Here’s how I would rate them: Peanut Butter Crunch, White Chocolate Chip Cookie and then Brownie Crunch.

Isn’t this just so fascinating???

Lunch:

Tuna Salad my way with blue corn tortilla chips

 

Dinner:

Some sautéed veggies and a pork chop. Love me some pork!

 

Dessert:

Just one square, it hit the spot.

 

 

No work out today, my body was telling me to rest my muscles so I listened 😉

Oh, and that spoonful of peanut butter shown above was consumed after breakfast! 🙂
